1 liter cider
2 or 3 whole star anise
2 cinnamon sticks
2tbs caster sugar
2 clementines, sliced
1. Peel the rind off two oranges with a potato peeler and keep some pieces for garnish. Then halve these two oranges and squeeze the juice. Slice the remaining orange.
2. Pour the cider into the saucepan and add the juice of the two oranges, the whole spices and 1tbs of the sugar
3. Bring to a very gentle simmer then turn off the heat. Add most of the sliced orange and clementines and leave to infuse for 5-10 minutes. Taste and add a little more sugar or juice if required.
4. Server in a heatproof glass with the remaining fruit slices and a swirl of orange peel.
